BOLO PRETO DA AVO (Granny’s Black Spice Cake)

This is a super moist simple spicy cake. Needs no icing, bells or whistles. Very nice with a cup of tea. The flavours get better with time, so you can make it 2 to 3 days before you want to cut it and store in an airtight container (although I baked this today 😁) And yes, that is milk stout beer…

  • 500 g cake flour
  • 400 g brown sugar
  • 15 ml bicarbonate of soda
  • pinch of salt
  • 12 ml cocoa
  • 12 ml ground cinnamon
  • 2 ml ground cloves
  • 5 ml ground nutmeg
  • 250 ml melted butter / margarine
  • grated rind of 1 lemon
  • 250 ml milk
  • 250 ml Milk Stout
  • 4 eggs
  • 25 ml Treacle sugar
  • 100 ml Port wine (I just used some Muscadel or you could even use sherry like OBS)

Sift dry ingredients together.
Add melted butter and rest of ingredients, except the wine / sherry.
Pour into greased tin and bake in a preheated oven to 180°C for ± 45 min.
Remove from pan and cool.
Drizzle the 100 ml wine / sherry over top of cake.
(I dusted my cake with some more cocoa. Won’t again because it stuck to the sherry hahaha)
Yummy.
