BOLLAS

A quick and easy substitute for koesisters!

  • 25 ml butter, melted
  • 20 ml sugar
  • 2 eggs
  • 4 × 250 ml self raising flour
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla essence
  • 250 ml milk
  • 250 ml water
  • 750 ml sunflower oil for deep fry
  • coconut for sprinkling

Whisk butter, eggs and sugar in a bowl until light and fluffy.
Add vanilla essence.
In a separate bowl sift flour and baking powder twice.
Add flour mixture to egg mixture.
Add milk/water and mix into a soft sticky dough.
Allow to rest for 30 minutes.
Place teaspoons full of mixture in hot oil and fry until golden brown.

Hint:
Dip spoon in cold water to ensure that dough separates from spoon to form neatly rounded balls when dropped in oil.

  • Syrup:
  • 1 cup white sugar
  • 1 ½ cup water

Boil together until sticky.
You may add water if syrup becomes too sticky.
Pour syrup in a pan.
Heat through, add bollas in syrup and boil 1 – 2 minutes until glossy, lift out and sprinkle with coconut.
