BOERE BOBOTIE IN THE MICROWAVE
- 1 onion
- 30 ml butter or margarine
- 20 ml curry powder
- 7 ml salt
- 2 ml tumeric
- juice of 1 lemon
- 1 kg beef mince
- 150 ml soft breadcrumbs
- 175 ml chutney
- 100 ml dry white wine
- 50 ml smooth apricot jam
- 100 ml milk
- 2 eggs
Peel and chop the onion. Microwave it with the butter or margarine, uncovered, for 4 minutes on 100% power, using a round pie dish 25 cm in diameter and 6 cm deep. Stir after 2 minutes.
Stir in the curry powder, salt, turmeric and lemon juice.
Add the mince and stir lightly with a fork to mix well. Cover and microwave the mixture for 5 minutes on 100% power. Stir well to loosen.
Stir in the crumbs, chutney and wine into the meat mixture. Cover and microwave for 10 minutes on 70% power. Remove from the microwave and leave to cool slightly.
Spread the apricot jam over the mince mixture.
Beat the milk and eggs, until just mixed and pour it over the meat. Microwave the bobotie , uncovered, for about 25 minutes on 50% power, or until the egg mixture has set.
Leave to stand for a few minutes.
