BOBOTIE BURGERS WITH RAISIN AND SULTANA CHUTNEY

If you like Bobotie (like me!), here’s a “Traditional with a Twist” recipe I recently made to celebrate Heritage Day

  • For the patties:
  • 1 kg ground beef
  • 1 ½ cup dry breadcrumbs
  • 2 onions, chopped
  • 30 ml oil
  • 15 ml medium curry
  • 10 ml turmeric
  • 15 ml apricot jam
  • 30 ml chutney
  • 1 egg, beaten
  • salt and pepper to taste

Start by heating oil in a pan.
Add chopped onion and fry until almost soft.
Add curry powder and turmeric and fry until fragrant.
Remove from heat.
In a bowl, combine ground beef with fried curried onion mix.
Add apricot jam, chutney, salt, pepper and egg.
Mix until well mixed.
Add breadcrumbs and mix until it comes together and can be shaped into a burger patty.
Place in refrigerator while making chutney.

  • For the raisin sultana chutney:
  • 2 red onions, chopped
  • 30 ml oil
  • 1 cup seedless raisons
  • ½ cup sultanas
  • 4 tablespoons apricot jam
  • 1 teaspoon medium curry
  • ½ cup vinegar
  • 1 cup water

Heat oil in saucepan. Fry onions until soft.
Add raisins, sultanas, apricot jam and curry and stir fry until fragrant (about 1 minute).
Add vinegar and water. Bring to the boil and reduce heat to a low simmer.
Simmer, while stirring every now and then for about 30 minutes until chutney has thickened a bit. Remove from heat.
Cook your patties in a frying pan, griddle pan or over some hot coals until cooked through.
Assemble your burger with some lettuce and tomatoes, the Bobotie patty and top with Raisin Sultana Chutney. Bon Apetit!
