BISCUITS LEPELSTEELTJIES
- 250 g unsalted butter
- 180 g sugar
- 2 eggs
- 500 g cake flour
- 60 g corn flour
- 1½ teaspoon baking powder
- 1 teaspoon vanilla essence
Cream butter and sugar until light and fluffy, add eggs 1 at a time, beating in well.
Sift dry ingredients and add to butter and sugar. Dough will be thick.
Roll into balls and pack on a prepared baking tray.
Make a slight dent in the centre of each cookie with your thumb or back of a wooden spoon and add glacé cherries or jam to the hole.
Bake at 170°C for 10 – 15 mins.
