BEEF POT ROAST WITH VEGGIES
Today is a very cold day in the UK so decided to make a beef pot roast and in honour of our 7th birthday I decided to post photos and recipe on here for everyone to enjoy.
- 1.4 kg rolled and tied piece of brisket beef
- 4 large carrots, peeled and cut into chunks
- 2 onions, peeled and cut into quarters
- 2 small broccoli heads, cuts into rough pieces
- 1 litre of beef stock
- 350 ml of Guiness or dark ale
Heat oven to 190 ºC.
Brown beef in hot pan and put in a oven proof casserole dish with a lid.
Fry all the vegetables off in the pan you done the beef in and pour over the beef and then mix the beef stock and ale together and pour over beef till it’s just covered, reserve what ever stock is left over as half way through cook you will have to top liquid up in casserole dish.
Place in oven and cook for 20 mins, then reduce temp to 150 ºC and cook for two hours checking half way and topping liquid up if needed making sure beef is covered with stock. Serve with roast potatoes or rice 😋😋
