BANTING CREAMY CHICKEN WITH PEPPERS AND SALAMI

Lockdown day#465 Banting Creamy chicken with peppers, salami, olives, capers and mushrooms on cauliflower mash and very non-Banting stewed peaches delicious dish.

  • 2 large chicken breasts, cut into thin strips
  • 1 red onion, sliced
  • 1 each small green and yellow pepper, sliced
  • 6 slices of salami, sliced in thin strips
  • 80 g butter
  • 2 tablespoons capers
  • ¼ cup olives
  • 400 g portabello mushrooms, cut into quarters
  • 1 cup chicken or veggie stock
  • 1 cup cream

In a large skillet sauté the chicken in butter until lightly browned but not completely cooked. Remove and keep aside.
Add the onion, peppers, salami to the skillet and sauté until lightly browned. Add the olives, capers and mushrooms and fry lightly.
Add the stock and boil until reduced by half.
Add the cream and chicken pieces and reduce the sauce by a third.
Check the seasoning and serve.
