BANANA, OATS AND COCONUT MUFFINS
- 4 ripe bananas
- 1 cup brown sugar
- 2 large eggs
- 125 g melted Stork Bake
- 5 ml vanilla essence or ½ a vanilla bean
- 1 cup cake flour
- ½ cup oats
- ½ cup desiccated coconut
- 5 ml bicarbonate of soda
- 5 ml baking powder
- 5 ml cinnamon
Preheat oven to 180°C and line a muffin pan with muffin liners.
Mash bananas. Mix the butter, sugar and add eggs.
Sift flour, bicarbonate of soda, baking powder and cinnamon together in a large bowl.
Add coconut and oats.
Mix banana mixture with dry ingredients and mix completely.
Spoon mixture into muffin pans.
Bake for between 15 and 20 minutes until golden brown.
