BANANA ICE CREAM

My eie reseppie – Kosmaak is soos ons lewe – doen dit met oorgawe.

  • 400 g banana per layer
  • 20 – 25 ml of coconut oil
  • 100 ml coconut milk
  • 40 ml coconut syrup
  • 60 ml cocoa
  • 2 teaspoons vanilla paste
  • fresh strawberries

Slice about 400 grams of Banana (per layer) and freeze until solid.

Note:
(If you want to make strawberry, use about 250 g of fresh strawberries and about 150 g of banana and freeze)

When frozen solid, put it in your food processor and I added  the coconut oil, coconut milk and the coconut Syrup.
Blitz this lot together – it will be noisy at first and then you are going to think that this is not going to work – Then it gets crumbly and THEN it gets creamy.
Remember to clear the sides with a spatula to get everything blended and smooth.
Pour into a dish and freeze.

For the Chocolate layer:
Add about 60 ml of cocoa but I suggest you taste test and add as much you think you would enjoy.

For the Vanilla layer:
Add 2 teaspoons of vanilla paste.

For the Strawberry layer:
Use about 100 g of banana and about 300 g of fresh strawberries which I froze first with the banana slices.
Use this as a general guide – just make it how you like it.
