BANANA CAKE

“Hi, just made a banana cake, but I put it in a sheet pan.”

4 large eggs
1½ cups sugar
1 cup oil
2 teaspoons vanilla essence
1 cup milk or buttermilk
3 cups cake flour
2 teaspoons baking powder
2 teaspoons bicarbonate of soda
2 teaspoons mixed spice or fine cinnamon
2 cups mashed bananas

Mix the eggs and sugar well.
Add the oil and vanilla essence and mix well.
Add the milk and bananas.
Sift the flour, bicarbonate of soda, baking powder and cinnamon or mixed spice.
Add this to the banana mixture and mix just until combined.
Grease two loaf pans or a sheet pan with butter and put on a little dry flour so that cake does not stick to the pan or put a sheet of baking paper in the sheet pan.
Bake at 180 °C for about 30 minutes or insert a toothpick to see if is baked.
