BACON PATè

| Servings: 1 cup per 300 g bacon

BACON PATè

  • 300 g bacon, chopped (or double 600 g to taste)
  • 2 medium carrots, diced
  • 1 medium onion, diced
  • 1 bay leaf
  • 1 large clove garlic, minced
  • 1 teaspoon fresh thyme or ⅓ teaspoons dried thyme
  • 1 teaspoon apple cider vinegar (I only had normal vinegar)
  • 1 teaspoon brown sugar
  • 1 teaspoon soy sauce
  • black pepper

Fry bacon on medium heat until crispy. Remove from pan.
Add carrots, onion and bay leaf, cook until veggies are softened, stirring occasionally.
Add garlic, chives and thyme and cook another 2 minutes.
Remove from pan, cool slightly, add bacon, vinegar, brown sugar and soy to it plus ½ cup water.
Use stick blender to puree to consistency required. I didn’t make it too smooth.
Test for taste, I added more vinegar.
Serve on crackers, bruschetta or with veggie sticks.
