BACON AND CELERY CREAM SOUP

Hierdie vir ons vandag gemaak. Ek het die resep uit ‘n baie ou tydskrif gekry 1993 Woman’s Value ‘Food Fair’.
- 250 g rindless back bacon
- 15 ml butter or margarine
- 500 ml chopped table celery with leaves
- 100 ml chopped onion or spring onion
- 5 ml chicken stock powder
- 750 ml boiling water
- 30 ml cornflour
- 500 ml milk
- 30 ml chopped parsley
- salt and freshly ground black pepper
- grated nutmeg
- Cut up the bacon finely and fry in butter or margarine until just cooked.
- Add the celery and cook gently for 8 – 10 minutes.
- Add the onion and cook 2 minutes more.
- Add the stock powder and water and simmer gently for 15 minutes or until the celery is tender to taste.
- Mix the cornflour with a little of the milk until smooth and sir into the soup with the rest of the milk.
- Bring to boil and simmer a few minutes.
- Stir in the parsley and season to taste with salt, pepper and nutmeg.
- Serve piping hot with buttered toast or wholewheat bread.
