A Quick and easy, refreshing salad.

  • 1 tablespoon apple cider vinegar
  • 1 teaspoon lemon juice
  • 1 teaspoon lime juice
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper
  • ½ teaspoon pepper
  • 2 teaspoons sugar
  • 1 tablespoon italian salad dressing
  • 1 small red onion, halved and thinly sliced
  • 1 tablespoon finely chopped chives
  • 1 large english cucumber, thinly sliced
  • 1 ripe, but firm avocado
  • ½ cup frozen peas
  • ½ green pepper, thinly sliced

Put the frozen peas, and green pepper into boiling water and allow to stand for 10 minutes, then drain.
Add vinegar, lemon juice, lime juice, salt and pepper, sugar and salad dressing to a bowl and vigorously whisk until it comes together.
Add the chives and onion into the dressing and let it macerate for five minutes.
Slice the avocado into 7 centimeter half moons.
Add the cucumber, avocado, green pepper and peas to a serving bowl with the dressing and gently toss to coat.
Taste and adjust seasoning.
Serve immediately.
