AVOCADO- AND YOGHURT DRESSING
Avocado and yogurt dressing with shredded lettuce was absolutely delicious. I had to try it for myself. It would also work with a hamburger with fish or chicken as the protein. Or even a plant based patty.
- Put the following in a blender or container that you can use a stick blender in:
- 1 avo
- 2 heaped tablespoons Greek double yoghurt, or plain unflavoured
- 2 tablespoons mayonnaise (I used homemade)
- 1 small garlic clove, grated
- 1 tablespoon red wine vinegar (substitute with 1 teaspoon apple cider vinegar)
- pinch of salt and pepper
Blend until smooth. Keep in sealed container in fridge and use within a few days.
It tastes delicious on toasted panini, spread with basil pesto and topped with roasted brinjals and baby tomatoes with extra pesto and olive oil drizzled over.
