AVOCADO AND ORANGE SALAD WITH BLACK OLIVE DRESSING

  • rocket leaves and baby spinach
  • 1 avocado, diced
  • 2 oranges
  • 1 small red onion, thinly sliced
  • fresh basil
  • ¼ cup Feta cheese
  • a handful crushed walnuts
  • 1⁄2 teaspoon sea salt
  • Dressing
  • 20 black olives, stoned and finely chopped
  • 1 tablespoon red wine vinegar
  • 3 tablespoon extra virgin olive oil
  • 2 tablespoon sweet chilli sauce
  • 1 tablespoon brown sugar
  • 2 small garlic cloves, finely chopped
  • 1⁄2 teaspoon sea salt
  • black pepper

Place rocket and spinach on serving plate.
Slice the avocados and arrange on top.
Slice the skin off the oranges and cut the flesh into segments, discarding pith and pips.
Cut each segment into halves or quarters and arrange over avocados with the onion and chopped basil.
Sprinkle with Feta cheese and walnuts.
Shake dressing ingredients in a glass jar, pour over the salad and serve.
