AMARULA CUPCAKES
- 1 cup sugar
- 115 g butter
- 2 eggs
- 1½ cup cake flour
- 1 teaspoon baking powder
- ¼ cup Amarula
- ¼ cup milk
Preheat oven 180ºC.
Line cupcake tray with cupcake liners.
Cream butter, add sugar and beat till light, fluffy and white.
Add eggs and mix well.
Add dry ingredients in two parts with milk and Amarula in between.
Spoon batter in cupcake liners ¾ full.
Bake for 20 – 25 minutes.
- Amarula buttercream:
- 4 cups icing sugar
- 125 g butter
- ¼ cup Amarula
- additional milk
Cream butter till light and smooth.
Add icing sugar and Amarula.
Add more milk till smooth and creamy (I used more Amarula)
