AMANDA’S CUICHE
- 1 tablespoon extra virgin olive oil
- 12 slices smoked streaky bacon, chopped
- 1 large yellow onion, finely chopped
- 4 large eggs
- ¾ cup (40 g) self raising flour
- ¼ teaspoon baking powder
- ½ cup (120 g) cream
- 150 g baby spinach, chopped
- 4 small broccoli florets, finely chopped
- 220 g grated cheese (tussers/cheddar)
- ¼ teaspoon salt
- ½ teaspoon freshly ground black pepper
- ½ teaspoon chilli flakes, optional
- ½ teaspoon mustard powder
Pre-heat oven to 190°C.
Sauté onion and bacon in oil. Set aside to cool.
In a large bowl beat the eggs.
Whisk in the flour and baking powder.
Mix in the cream and cheese.
Fold in the baby spinach and broccoli.
Mix in the sautéed onion and bacon.
Season with salt, pepper, mustard and chilli flakes.
Transfer to a sprayed baking pan. (20 x 15 x 5 cm)
Bake for 25 minutes or until golden brown, remove from oven.
Allow to rest for 15 minutes before serving, serve warm or cold.
