ADELLE’S FLAPJACKS WITH PEAR CUSTARD
Today’s brunch. Hubby wanted something sweet, so I made flapjacks and pear custard.
- Custard:
- 4 pears finely diced
- ½ cup sugar
- ½ cup water
- 2 tablespoons custard powder
- ½ cup milk
Cook pears in water until almost soft, add sugar.
Boil until soft. Mash.
Mix custard powder into milk, add to pears and cook until thickened.

- Flapjacks:
- 1 ½ cups flour
- 4 teaspoons baking powder
- pinch of salt
- 1 cup of milk
- 1 egg
- 1 ½ teaspoon vanilla essence
- ¼ cup butter
- pinch of salt
Mix wet and dry ingredients together.
Drop big spoons full of mixture onto a hot greased frying pan.
When bubbles form flip over.
