3 INGREDIENT BANANA BREAD

  • 7 large, over-ripe bananas
  • 385 g tin condensed milk
  • 500 g packet self-raising flour
  • 10 ml cinnamon
  • 10 ml vanilla essence, optional

Mash the bananas until completely smooth. Stir in the condensed milk.
Fold in the flour and a good pinch of salt.
Divide between 2 x 10 x 19 cm loaf tins lined with baking paper.
Set aside for 20 minutes.
Preheat oven to 180°C.
Bake the loaves for about 40 minutes, or until a testing skewer comes out clean.
Remove from the tins, cover (with plastic wrap or in a plastic container) while still hot and set aside to cool.

Baked 12 muffins, 9 cocktail muffins and 3 mini banana loaves with one mix.
