3 CHEESE ZUCCHINI FRITTERS

Served with pork fillet, wrapped in bacon and fried in Asian sauce, mash and pumpkin.
- 6 medium sized zucchini, grated coarsely (baby marrow)
- 4 Halloumi cheese fingers, grated
- ½ cup Cheddar cheese, grated coarsely
- ⅓ cup Parmesan cheese
- 2 eggs
- ½ red onion chopped
- 30 ml psyllium husk fiber
- oil for frying
Mix all the ingredients together except the psyllium husk powder.
Sprinkle the psyllium husk powder over the mixture and stir it through.
Allow to stand for about 20 – 30 minutes to absorb the moisture in the mixture.
Heat a heavy bottomed pan with a little oil.
Fry spoonful’s (I used a small ice-cream scoop) of the fritter mixture over medium heat for a few minutes on both sides.
