  • 2 leeks, cut in rings
  • 1 garlic clove, finely chopped
  • half a punnet of mushrooms, sliced
  • half a packet of broccoli and cauliflower, sliced
  • half a bag of baby spinach
  • 1 tablespoon cream cheese
  • 50 g ricotta cheese
  • 125 ml cream
  • 3 eggs
  • veggie spice, salt and pepper to taste

Preheat oven to 180⁰C.
Fry leeks and garlic until browned. Add the mushrooms and fry another few minutes.
Add the broccoli and cauliflower and fry for another couple of minutes.
Add the spinach until it wilted. Take off the heat.
Add the cream cheese, then the ricotta and mix well.
Beat the eggs and cream together. Add to the veggie mix and mix well.
Pour into a prepared Pyrex dish and bake in the oven until the eggs are set and golden brown.
