My Trio of Desserts! Lemon Meringue, Milktart Cupcake and Peanut butter cup! So so tasty!!

Milktart Cupcakes
Ok. I use the Golden Cloud Vanilla cake mix and bake the cupcakes as per box. Let them cool.

  • For the milktart filling:
  • 1 tin condensed milk
  • 2 and a half cups milk
  • 2 tablespoons melted butter
  • 4 eggs
  • 3 tablespoons custard powder
  • 3 table spoons maizena
  • pinch of salt
  • 1 teaspoon vanilla essence

Put all ingredients in a microwave safe bowl and mix well. Microwave on high for 7 minutes. Remove bowl from microwave and mix well with an electric mixer. Put back in microwave and microwave on high for 5 minutes. Again remove bowl and mix with an electric mixer until smooth. Return to microwave and microwave for a last 3 minutes on high. Remove and mix with electric mixer until smooth.
Put a layer of cling wrap directly on the mixture so not to allow a skin to form and let the mixture cool a little. About 15 min.
Cut out a hole from the centre of prepared cupcakes. Put Milktart mix in a piping bag with a large nozzel and pipe onto cupcakes firstly filling the hole in the centre.
Dust with cinnamon and let set.
These tasted even better the next day. I didn’t keep them in the fridge… Yet again they didn’t last very long!!

  • Lemon Meringue
  • 6 x Kit Kat Citrus (I used 1 packet of crushed lemon creams this time)
  • 4 tablespoons melted butter
  • Filling:
  • 1 can condensed milk
  • 4 eggs split
  • half a cup lemon juice (to taste)
  • 2/3 cup castor sugar

Preheat oven to 160ºC.
Crush kit kat’s and mix with butter. Line muffin tray with muffin liners and press kit kat mix into bases. Refrigerate.

Whisk egg yolks until thick and double in size. Add condensed milk and mix well. Slowly add lemon juice (to taste) and mix well. Pour this curd over prepared bases. Whisk egg whites until stiff.
Start adding sugar spoon by spoon and mix until smooth and shiny.
Pipe Meringue onto curd and bake in oven for about 10 minutes… Until nice and golden.

  • No bake Peanut butter cups:
  • 2 and a half cups granola
  • 1 cup chopped peanuts
  • 1 tablespoon peanut butter
  • 3 tablespoons honey (more if needed)
  • 1 cup peanutbutter
  • 250 g dark chocolate melted

Mix granola, chopped peanuts, tablespoon peanut butter and honey. Nice and sticky consistency but not runny. Press into greased muffin pans to create shells (you’re going to fill these) . Refrigerate about an hour or until set. Melt 1 cup peanut butter in the microwave for about 30 seconds. Pour into prepared shells. Refrigerate for 1 hour or until set.
Melt dark chocolate and pour over set peanutbutter. Refrigerate for an hour or until set.
These are very very decadent and oh so good!!!
