STIR FRY VEGGIES WITH NOODLES

  • 3 packets of 2 Minute noodles (make as per instructions)
  • 3 cups of fresh veggies of choice
    (I used red bell pepper, babymarrows, baby brinjals, mangetout peas plus a small bunch of Tatsoi Asian mustard spinach which I just cut the bottom stalk off and left the leaves whole for stir frying.)

Stir fry in little oil in wok or frying pan for a few minutes then add the noodles and stir through.
Serve with balsamic drizzle and meat, fish or chicken.
