SPICY TUNA FISH CAKES
It is really delicious, especially with the capers.
- 250 g potatoes, or more, peeled and diced
- 2 x 200 g tuna, drained
- 50 g grated Cheddar
- 4 spring onions, chopped
- 1 small clove of garlic, crushed
- 2 teaspoons thyme
- 1 small egg, beaten
- ½ teaspoon cayenne pepper
- 4 tablespoons cake flour
- salt and pepper
- Optional 3 – 4 tablespoons chopped capers (adds nice brightness to it)
Cook potatoes in salted water until soft. Drain well and mash. Mix tuna, cheese, spring onions, capers (if used), garlic, thyme and egg into mashed potatoes. Season with salt, pepper and cayenne.
Shape into fish cakes. Dust with sesame seeds (optional) and seasoned flour and fry until crisp on both sides.
Serve garnished with herbs and dipping sauce made with sweet chilli sauce mixed into sour cream.
