QUICK AND HEALTHY SCRAMBLED EGGS WITH AVOCADO

If you’re like me, cooking for one seems like too much trouble. But let me tell you, this dish took less than 10 minutes to make and it is delicious. Your body and taste buds will thank you, I promise.

  • 1 tablespoon butter
  • 1 teaspoon olive oil
  • 2 eggs
  • 2 tablespoons milk
  • ½ cup cheese, grated
  • ½ avocado, diced
  • 3 slices sandwich ham, cubed
  • ½ tomato, cubed
  • salt and pepper, to taste
  • toast, to serve

Heat a pan on medium heat. Add the oil and butter and melt until butter is melted and forms little bubbles. Add the eggs and milk and stir around to break up the eggs. You could whisk it beforehand, but I hate washing up so I did it in the pan. Add the cheese and stir again. After about two to three minutes add the ham, avocado and tomato, stir again and adjust the seasoning. When the eggs are set to your liking, switch off the plate.
Serve the scrambled eggs on a slice of toast.
