PORK MEATBALLS IN CREAMY TOMATO SAUCE

Lockdown day #180🇿🇦 Pork meatballs in creamy tomato, spinach & smoked paprika sauce on spaghetti.

  • 375 g packet of Eskort Mediterranean pork sausages, defrosted
  • 1 tin Italian whole peeled tomatoes
  • 200 ml tomato passata
  • 10 ml sugar
  • 5 ml smoked paprika
  • 300 g baby spinach leaves
  • 250 ml fresh cream

Using scissors cut the sausages open along the length, remove the tube of meat and cut each piece into 3.
Shape into small meatballs and fry in a bit of oil and butter in a deep frying pan (wok works well) until golden brown.

Add the spinach to the meatballs and stir fry till wilted. Add the tin of tomatoes and the passata with the sugar and smoked paprika to the meatballs and simmer while stirring a few times. Once the tomato sauce has reduced a bit and the tomatoes have softened, add the cream and stir while warming it through.

Serve immediately on spaghetti and grate Parmigiano over.
