MY HEALTHY MISH-MASH

Catherine and I have a deal. She picks the protein and I have to make a dish. Or, if I pick the protein, she has to cook. Any guesses how that goes…? Tonight she picked bacon. And I thought she needed some vegetables.

  • 250 g diced bacon
  • 1 teaspoon garlic
  • 1 small red onion, diced
  • 400 g frozen creamed spinach
  • 1 tomato, chopped
  • 1 teaspoon sugar
  • 2 cups of cooked rice
  • black pepper and salt to taste

Fry the onion, bacon and garlic on a medium heat so that the onion softens and the bacon cooks through.
Add the creamed spinach, tomato and sugar and simmer for 20 minutes.
Tip the rice into the pot and add salt and pepper to taste.
