  • 2 tablespoon butter/margerine
  • 50 ml sugar
  • 1 egg
  • 1 tablespoon apricot jam
  • 1 teaspoon bicarbonate of soda
  • 125 ml milk
  • 250 ml cake flour
  • 1 tablespoon vinegar
  • Sauce
  • 125 g butter
  • 250 ml cream
  • 100 ml sugar
  • 1 teaspoon vanilla essence

Cream the butter and sugar. Add the egg and jam to the butter.
Allow your baking soda to foam in the vinegar then add to the milk.
Add the flour to the butter mix. Thereafter add the milk to the the mixture.
Preheat oven 180ºC.
While the pudding is in the oven make your sauce on the stove top.
After the cake has been baked poke holes in the cake and pour the sauce over the cake let it soak up all the sauce before serving.
Serve pudding with whipped cream, custard, ice-cream or eat without topping.
