FRUIT COCKTAIL PUDDING

Devine and goes a long way.

  • 2 cups of cake flour
  • 2 flat teaspoons bicarbonate of soda
  • 1 cup sugar
  • 1 tin fruit cocktail (410 g)
  • 3 eggs

Beat eggs and sugar.
Add flour, bicarbonate of soda and juice of fruit cocktail. Mix well.
Add the fruit to the mixture.
Pour into a sprayed large Pyrex or oven pan.
Bake at 180˚C for plus minus 40 minutes.

  • Sauce:
  • 1 cup sugar
  • 1 teaspoon vanilla
  • 125 g margarine
  • 1 tin Ideal Milk / milk / cream

Boil all ingredients together.
Remove pudding from the oven when ready.
Use a fork to poke the pudding so that sauce can seep through.
Pour sauce over the pudding.
