FORTUNE COOKIES

With Valentines day coming up I thought I’d try a hand at making fortune cookies 🙂 Each with a cheesy message inside. Except for burnt fingertips they quite easy to make.

  • 2 egg whites
  • ½ cup vanilla extract
  • 3 tablespoons vegetable oil
  • ½ cup cake flour
  • ½ cup sugar
  • 1 ½ teaspoons Maizena
  • ¼ teaspoon salt
  • 3 teaspoons water
  • paper strips with cheesy lines
  • pink food colouring, optional
  • chocolate, optional
  • sprinkles, optional

Preheat oven to 170°C and line a baking sheet with non stick paper.
In a bowl sift together the flour, sugar, Maizena and salt and set aside.
In another bowl, whisk the egg whites until just frothy then mix in the vanilla, oil and water.
Add egg mixture to flour mix and whisk until smooth.
If using, add food colouring and mix well.
Use a tablespoon to scoop 4 separate spoons fulls onto the prepared baking sheet and space them apart.
Use the back of a spoon to spread the batter into about 10 cm wide circles. Don’t make them too thick or they won’t work.
Bake for about 9 to 10 minutes until edges are golden brown. Remove from over and work fast. Immediately flip circles over and add the rolled up paper strip in the middle of the circle. Fold cookie in half, pick it up and bend it on the rim of a mug (seem facing outward) then place it in a muffin tin cavity to hold its shape while it cools.
This is VERY hot so be careful.
Repeat with each cookie, baking in batches of 4 so that you work with fresh hot cookies before they harden.
Dip in melted chocolate and decorate with sprinkles if using.
I made 20 fortune cookies from this batter.
