CHOCOLATE TRES LESCHES CAKE

I made this for my nieces birthday. Might as well be a chocolate mousse cake 😁 It is so so good!!!
  • Cake:
  • 1 ¾ cups cake flour
  • 1 ¾ cups sugar
  • ¾ cup cocoa powder
  • 1 teaspoon baking powder
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 cup buttermilk
  • ½ cup oil
  • 2 large eggs, room temp
  • 1 teaspoon vanilla
  • 1 cup freshly brewed strong hot coffee
  • Filling:
  • 1 can condensed milk
  • ¾ cup cream (I use the long life whipping cream)
  • ¾ cup evaporated milk
  • 3 tablespoons cacao
  • Topping:
  • 1 cup icing sugar
  • ½ cup cacao
  • 3 cups very cold whipping cream

Preheat oven to 180°C.  Spray a baking pan with non stick spray.
Put flour, sugar, cocoa, baking powder, baking soda and salt in a bowl and mix well.
Mix buttermilk, oil, eggs and vanilla together.
Slowly add in the dry ingredients and mix on low.
Add the coffee and make sure everything is combined. The batter will be thin.
Pour into prepared pan and bake for about 35 minutes or until the centre of the cake springs back when you touch it.
While the cake is still warm poke lots of holes all over the cake with a skewer or a fork.

Prepare the the filling:
Whisk the filling ingredients together. Slowly pour this over the warm cake. Allow to cool completely.

For the topping you need to follow these steps:
Refrigerate the bowl for 10 minutes until really cold.
Sift icing sugar and cocoa together. Beat the heavy cream for 1 minute.
Add half the sugar and cocoa mix to cream and mix well.
Add the rest of the sugar and cocoa mix and continue mixing until mix is thick and spreadable.
Spread this on the cake. Decorate as desired.
Amazing cake!!
