CHOCOLATE BROWNIES WITH DARK CHOCOLATE
- 250 g butter
- 1 cup castor sugar
- 1 cup brown sugar
- 3 jumbo eggs or 4 large eggs
- 2 teaspoons vanilla essence
- 1 cup all-purpose flour
- ¾ cup cocoa powder
- 100 g 75% dark chocolate, cut into pieces
- 1½ cups nuts
- icing sugar
Set oven to 180 °C.
Toast nuts in pan or roast in oven and set aside.
Melt butter in mixing bowl. Add castor sugar to butter and mix. Add brown sugar and stir till combined.
Add eggs and mix well. Add vanilla essence and stir. Add flour. Sift and add cocoa powder; mix well. Add chocolate.
Chop the roasted nuts and add to the mixture, mix well.
Line baking tin with baking paper and grease.
Spread batter out on baking tin.
Bake thin layer 20 – 23 minutes. For thick layer, bake for 25 minutes.
Cut into blocks and dust with icing sugar, amount to your taste.
