  • 250 g salted butter
  • 1 cup sugar (brown or white)
  • 2 eggs
  • 1 teaspoon vanilla essence
  • ¼ cup of cooking oil
  • 4 tablespoons cocoa powder
  • 2 cups coconut
  • 3 cups sifted cake flour
  • melted chocolate for decorations

Cream butter and sugar together. Add eggs, vanilla essence and cooking oil and cream until smooth in texture.
Add the dry ingredients (see note) and make into a biscuits dough.

Be careful when you adding in the flour. You may not require all of it. Just make sure you have a rollable dough.
Roll out and cut with a cookie cutter, place on a prepared cookie tray.
Bake at 180 ºC for 15 minutes.
Let the cookies cool completely.
Top with melted dairy milk chocolate and sprinkle with whatever you want.
