BREAKFAST OR LUNCH BAKE

Leftover mince, egg and cheese served with quacamole! Very filling, very tasty and keto/low carb and diabetic friendly. A very handy recipe to use up a few bits and bobs in the fridge and turn it into a proper meal on a cold afternoon.

  • 1 small onion, chopped
  • 1/2 green or red pepper, chopped
  • 8 slices salami, chopped
  • 1 – 1  1/2  cup leftover savory cooked mince
  • 6 eggs
  • 125 ml cream
  • 1 teaspoon granulated garlic
  • salt and pepper to taste
  • 1 cup grated cheese
  • parsley for sprinkling over the top

Fry the onion and pepper in a bit of oil until soft, add the salami and fry 5 more minutes.
Add the mince, heat through and drain off any extra oil. Spread the meat mixture on the bottom of an oiled 23 x 15 x 5 cm baking dish.
Beat the egg, cream, garlic, salt and pepper in a bowl and pour over the meat.
Sprinkle cheese and parsley over and bake for 30 minutes at 180ºC.
Let it cool for a few minutes, then slice and serve.
