BANANA DROP COOKIES
- 1¼ cups sugar
- ⅔ cup butter
- 1 teaspoon vanilla essence
- 1 cup banana, mashed well
- 2 eggs, beaten
- 2¼ cup cake flour
- 2 teaspoons baking powder
- ¼ teaspoon baking soda
- ½ teaspoon salt
- ½ teaspoon cinnamon
- For topping (optional):
- ¼ cup sugar
- 1 teaspoon cinnamon
In a small bowl, combine the flour, baking powder, baking soda, salt and ½ teaspoon of cinnamon.
Cream the sugar, butter and vanilla until light and fluffy.
Add the eggs and beat well. Stir in the banana.
Slowly mix the dry ingredients into the wet ingredients. Chill for 30 minutes in the refrigerator.
Preheat oven to 400ºF (200ºC).
Drop teaspoon sized balls of dough two inches (5 cm) apart on greased cookie sheets.
Mix the topping ingredients and sprinkle with cinnamon/sugar mixture; if desired.
Bake 8 – 10 minutes or until browned.
Cool for 2 minutes and transfer to racks.
